The is nothing like a good biscuit with a coffee and try as I have you can't find a Gluten Free Cantucci.
So here is our recipe:
100g of unbleached almonds
200g of ground almonds
50g of rice flour
85g of Muscavado sugar
2 eggs beaten
2 tablespoons of almond extract
1 tablespoon of bicarbonate of soda
Pinch of salt
Place the 100g of unbleached almonds on a baking tray and bake for 10 minutes or so, keep an eye on them, I find around 7 minutes is enough in our Aga top oven (190`C)
Allow to cool and add to the rest of the mixture, that you will prepare as below. My Kitchen Aid will break up the Almonds into smaller pieces but if yours does not, try hitting them gentily with a rolling pin prior to adding to the mix, Put them in a freeze bag first or fold over a clean cloth. Don't blame me if you mark the rolling pin.
If you like them whole try adding them after you've prepared the mix and fold them in by hand.
Beat the eggs
Weight out the sugar, the rice flower, and the ground almonds.
Add to the food processor and mix, adding the almond extract and finally the bicarbonate of soda and the pinch of salt.
Next comes the rolling, lift out the mix cover your hands in rice flower and scatter some on top of the mix. Seperate into three equal balls and roll into sausages. About as thick as a 10p. I use grease proof paper, its also easier to transfer to the baking tray.
If you like you can brush the rolls with egg white. I don't but you can try it.
Place on a baking tray in an oven at 190`C and bake for 20 minutes.
Now I find that around 16 minutes in the Aga top oven is enough. I turn them around at 7 minutes. Keep an eye on them first time you do it. It's easy to burn them.
They will expand in the oven so make sure there is plenty of space between each roll.
At 20 minutes or less if you've got an Aga, take them out. They should be smelling pritty good and start looking like Cantucci, now comes the good bit, slice them diagonally, be carefull there soft but also a bit flakey. You need a sharp knife to cut through and whole almonds.
Now return them to the oven at 140`C or to the Agas lower oven for 20 minutes to harden off.
Ahhh! Can you wait for them to cool. Just enough time to make a coffee.
